Peanut Butter Chocolate Chip Cookies With Honey Roasted Peanuts

2 sticks butter

2 cups olive oil
2 cups peanut butter (Kirkland Organic)

3 cups granulated sugar

2 cups dark brown sugar

6 large eggs

2 tablespoon vanilla extract

6 cups freshly ground whole wheat flour

4 teaspoons baking soda

3 teaspoons salt

a bit more than 1 cup honey-roasted peanuts, coarsely chopped

2 cups milk chocolate chips (1 package Guittard)

Preheat oven to 375 degrees.

Cream butters, sugars, egg and vanilla with whisks in Bosch until smooth.

Use a whisk to mix dry ingredients in a separate bowl and stir into peanut butter mixture (use dough hook in Bosch).

Throw in peanuts and chocolate chips.

Scoop into golfball size balls and place 2 inches apart on Pampered Chef baking pan.

Bake for 10-12 minutes.  Leave on sheet for a minute before transferring to wire rack to finish cooling.

This made a ridiculous amount of cookies.  Like 10 dozen?  I needed lots of cookies for a friend’s political open house.  You could easily halve this recipe.
