I am excited to announce a new addition to our family: a bigger refrigerator! And it’s a side-by-side too! We are keeping our teeny fridge/freezer in our garage/playroom and hope to use the extra space as a way to save $$! The idea is to save $100 a month in bulk deals and not going out to eat, and we’ll have paid for our fridge in 9 months. I think that will be no problem.
This week I pulled several recipes from the Nourishing Gourmet and Crunchy Procrastinating Perfectionist. I love that people will share their recipes ideas online. It is so neat — and easy — to find healthy recipes that taste good when you can look to real people for ideas! For TONS more ideas, check out Organization Junkie’s Menu Plan Monday!
Prep: Make Chicken Broth all day (freeze extra for future meals), set soup ingredients to soak overnight.
B — Scrambled Eggs
L — Bean Burritos and Sliced Pineapple
D — Salmon, Steamed Broccoli, Salad
Prep: Soak Oats before bed. Arrange Chicken Enchilada Casserole and keep in fridge.
B — Oatmeal
L — Bring Chicken Noodle Soup to visit Grandma
D — Chicken Enchilada Casserole
Prep: Get French Toast Casserole ready to go, soak overnight in fridge.
L — To Go: PB and J, raw veggies and hummus (buy tortilla chips to dip too?), Activia if any left!
D — Chicken Noodle Soup (I am loving this with rice vermicelli — um, um, good!)
B — Golden Oats
L — Is there any soup left? If not, quesadillas or bagels or….
D — (Crock Pot) Pot Roast
L — Leftover Pot Roast
D — Whole Wheat Pizza (I’ve never been successful at homemade whole wheat pizza crust. I actually really enjoyed the ease of gluten free pizza dough, but now that I am doing the wheat-challenge, I would like to try a more whole-grain pizza. I’ll update how this recipe works!)
B — Grape Nuts and Milk
L — Bring something to Whites’ picnic…?
B — Eggs and Toast
L — Leftovers or scrounge!
D — Cheesey Ham and Rice Soup Leftovers (quesadillas too if the soup is low).
I plan to try and make this recipe for healthy “Mounds” Candies~!
