Menu Plan Monday — January 7th, 2008

It’s Menu Plan Monday time again! I love the way this little meme is helping me stay organized in the kitchen. LOVE IT! Please see all the entries at Organized Junkie for more ideas than you can shake a wooden spoon at, and for those of you staying away from gluten, have a peek at the Gluten Free Menu Swap hosted this week by Gluten Free Mommy!

Monday:

Breakfast — Cereal and Smoothies

Lunch — Pumpkin Bread and Apples with Peanut Butter.

Dinner — Mexicale Chicken and gluten-free Cornbread (amazing!)

Tuesday:

Breakfast — Golden Oats

Lunch — Tostadas, I think. I have a Costco-sized box of refried beans that haven’t been touched since going gluten free (bean burritos were a staple lunch around here). I’m thinking bean tacos, or tostadas, with corn tortillas.

Dinner — thawed Tonya’s Chicken Chili (I made soooooo much of this over the holidays, with guests here. Our family of 5 plus 4 guests ate if for 2 meals, and I think I’ve frozen enough for our family to have it another 2 meals.) Apple Crisp for Dessert!

Wednesday:

Breakfast — Scrambled Eggs

Lunch — leftover soup or Tomato Soup from a box

Dinner — Lentil Soup w/ Sausage

Thursday:

Breakfast — Skillet Potatoes (I bought the frozen kind this time, instead of making my own. Sounds easier, but we’ll see how taste compares! They were only $2 for a large bag!)

Lunch — Leftover Lentil Soup

Dinner — Spicy Beef n’ Beans for the Crockpot (Crystal Miller)

Friday:

Breakfast — Soaked Oats

Lunch — Leftover Beef n’ Beans

Dinner — Barefoot Contessa Chicken Chili

Saturday:

Breakfast — GF pancakes

Lunch — Baked Potatoes

Dinner — Barefoot Contessa Chicken Chili (this is one of those meals that tastes BETTER the second day. We’ll share it with guests today!)

Sunday:

Breakfast — leftover pancakes with eggs

Lunch — go out after church

Dinner — Cheeseburgers and salad

  1. Bonnie — I’m sorry I didn’t have my links up when you checked my blog! Soaked oats are just oats soaked overnight in water, and Golden Oats are like a warm, chewy granola with bits of sweet fruit.

    Your museli slice recipe looks totally YUM! I’ve got to look into whether or not I can eat Rice Crispies — I must find a way to try that museli slice!

  2. What sort of lentils do you use in the soup? I have several sorts/ colours and keep meaning to use them more than the couple of dishes I know how to do at the moment.

  3. I use the green ones. Although I used the red ones once, in a slightly different recipe, and the taste was not much different. Which ones are your favorite?

    Most of our groceries stores here only have green (greenish brown, I guess) lentils. I had to shop around quite a bit to find the red ones the time I needed them!
