It’s Menu Plan Monday time again! I love the way this little meme is helping me stay organized in the kitchen. LOVE IT! Breakfast — Cereal and Smoothies
Lunch — Pumpkin Bread and Apples with Peanut Butter.
Breakfast — Golden Oats
Lunch — Tostadas, I think. I have a Costco-sized box of refried beans that haven’t been touched since going gluten free (bean burritos were a staple lunch around here). I’m thinking bean tacos, or tostadas, with corn tortillas.
Dinner — thawed Tonya’s Chicken Chili (I made soooooo much of this over the holidays, with guests here. Our family of 5 plus 4 guests ate if for 2 meals, and I think I’ve frozen enough for our family to have it another 2 meals.) Apple Crisp for Dessert!
Breakfast — Scrambled Eggs
Lunch — leftover soup or Tomato Soup from a box
Dinner — Lentil Soup w/ Sausage
Breakfast — Skillet Potatoes (I bought the frozen kind this time, instead of making my own. Sounds easier, but we’ll see how taste compares! They were only $2 for a large bag!)
Lunch — Leftover Lentil Soup
Breakfast — Soaked Oats
Lunch — Leftover Beef n’ Beans
Dinner — Barefoot Contessa Chicken Chili
Breakfast — GF pancakes
Lunch — Baked Potatoes
Dinner — Barefoot Contessa Chicken Chili (this is one of those meals that tastes BETTER the second day. We’ll share it with guests today!)
Breakfast — leftover pancakes with eggs
Lunch — go out after church
Dinner — Cheeseburgers and salad
